Spiced Roasted Apples

No Thanksgiving feast would be complete without a sweet treat to top it all off. Instead of the heavy pies and cakes this year, try some beautifully spiced and roasted apples. Seasonal and nutritious, roasted apples will make a sweet and satisfying end to any meal.

  • 4 apples (Gala, Pink Lady, or Honeycrisp make great roasters)
  • ⅓ cup rolled oats
  • 4 tbsp. walnuts
  • 4 tbsp. currants
  • 2 tsp. cinnamon
  • 1 tsp. ground cloves
  • 1 tsp. ground ginger
  • 1 tbsp. maple syrup
  • 1 tbsp. coconut or avocado oil
  • ⅓ cup apple cider
  • Pinch of salt

Preheat the oven to 400 degrees. Wash and core the apples.

In a large bowl, combine the oats, walnuts, currants, cinnamon, cloves, maple syrup, oil, and salt. Mix until well blended.

Place the apples in a baking dish, spoon in the mixture evenly amongst the apples. Pour the cider into the bottom of the pan. Bake for about 30-40 minutes, basting the apples with cider every 10 minutes. The apples should be fork-tender.

Serve warm.
